The Chocolate & Raspberry Topped Pancakes We’re Loving Right Now

We’re always dropping brand-new recipes in the Food section of the Sweat app, and one we’re loving right now is these pancakes served with vegan chocolate sauce and fresh berries. 

Choc Top Pancake Recipe 

Prep time: 5 minutes

Cook time: 15 minutes

Serves: 1

Vegan chocolate sauce ingredients 

  • 1 tbsp cacao powder (15g) 

  • 1 tbsp pure maple syrup (15ml)

  • 1 tbsp unsweetened coconut milk (15ml)

  • 1 tsp almond butter (5g) 

  • Pinch of sea salt 

Pancake Ingredients 

  • ¼ cup all-purpose flour (30g) 

  • 1 tsp baking powder (5g) 

  • 1 tsp vanilla extract (5g)

  • 1 tsp pure maple syrup (5ml) 

  • 100g soy milk (or milk of choice) 

  • 1 tsp apple cider vinegar (5ml) 

  • Pinch of sea salt

  • ¼ cup fresh raspberries (30g)

Method: Vegan chocolate sauce 

  1. Combine all of the sauce ingredients in a small microwave-safe bowl and whisk vigorously until well combined. 

  2. Microwave for 20 seconds and mix well until smooth. 

  3. Set it aside to allow it to thicken as it cools (if you want it to thicken faster, refrigerate it while you finish the next steps).

Method: Pancakes 

  1. After you’ve prepared the vegan chocolate sauce, add the flour, baking powder and a pinch of salt in a medium mixing bowl and whisk to combine.

  2. In a separate small bowl, whisk together the vanilla extract, maple syrup, soy milk and apple cider vinegar.

  3. Add the wet ingredients to the dry ingredients and mix until smooth. Set aside to rest for 5 minutes.

  4. Heat a non-stick pan over medium heat and pour half of the batter into the pan (or use all of the batter to make one large pancake). Cook until bubbles start to form on the surface, then flip and cook until golden brown.

  5. Serve the pancakes topped with vegan chocolate sauce and fresh raspberries.
